I know what you're thinking: "Maple syrup and chicken? Are you sure?" I promise you, it's amazing.
Maple syrup is one of those foods that pairs well with savory items. The sweet and earthy flavor of the syrup melds well with the savory chicken and spices in the potatoes. Beside, adding a little sweetness to a dish can be a great way to get picky children to eat their vegetable and dinner.
To make this fall flavored recipe you'll need:
- 2 pounds chicken breast and drumsticks
- 3-4 medium-sized potatoes, chopped
- 1 small onion
- 2-3 Tbsp. vegetable oil
- 2-3 Tbsp. paprika
- 1-2 tsp. salt (optional)
- Maple syrup to coat chicken
To start, preheat the oven to 400 degrees. Next, grease a shallow baking pan. Cut the potatoes into cubes. Chop the onion, and mix with the potatoes, oil, paprika and salt. Place in baking pan. Bake the potatoes and onion, uncovered, for 30 minutes. After 30 minutes turn oven temperature down to 350 degrees. Remove the potatoes from the oven, and place the chicken on top. Pour the maple syrup on top of the chicken, allowing some to drip down over the potatoes. Place the chicken and potatoes in the oven, uncovered, for 1 hour and 15 minutes, or until browned and chicken is no longer pink. Baste with the maple flavored drippings once or twice during the baking process. Serve with your favorite vegetable and enjoy!
