Tastes of Summer: Funfetti Cake Batter Chex Mix

The perfect recipe for your grad party or Fourth of July celebration.

 

One of the easiest, and tastiest, dishes to make for a party is a snack mix, and this recipe is no different. While regular Chex mix is good, my sweet tooth prefers dessert snack mixes like this Funfetti cake batter Chex mix.

The great thing about snack mixes is that they are easy to make, and can generally feed a large number of people. So, make this recipe the night before and save yourself some day-of party stress.

To make this recipe you'll need:

  • 5 cups Chex cereal
  • 10 oz. white chocolate chips
  • 1 1/2 c. Funfetti cake mix
  • 1/2 c. powdered sugar
  • 1 tsp. vegetable shortening
  • 1/2 tsp. of almond extract

To start, combine the almond extract with the white chocolate chips and melt according to the package directions, adding vegetable shortening to thin. Next, pour the cereal into a large bowl and drizzle the melted chocolate over the cereal. Mix gently with a large spoon or spatula. Once the cereal is coated, dump the cake mix and powdered sugar onto the cereal and mix gently with large spoon. Sprinkle with extra sprinkles if you'd like. Enjoy!
