Steve Pilon, co-owner of The Wooden Spoon: "We're switching over to our spring concept. The Raw Bar is more of a winter thing because that's when oysters are best. We're going to have world street food Saturdays and set up a kitchen on the patio. We will be doing true tapas style food - authentic we'll call it. They're going to start construction Friday and it will be done in about three weeks. I think that it's important for businesses to not do the same thing all the time. They have to change with the times and the season. Change is good for everybody, employees and customers. Everybody wins at that point. For places like us, people seek us out because they're looking for different. And I think it's really important that we provide that different atmosphere, different experience, different product - there's a lot of different levels of being different. Every year, we think about how we can make it better. This year, it's the patio kitchen."
