Brighton Business Spotlight: Wedding Cake Art & Design Center

The store is a new addition to downtown Brighton, and opened on Grand River Ave. at the end of August.

Christa Rollison and her husband, Kory, are no strangers in the cake department - they've been baking and selling wedding cakes and more out of their home kitchen for the past ten years or so.

Now they have their very own storefront on Grand River Ave. opened at the end of August.

"We have a licensed kitchen at home, but having consultations and the brides to the home isn't always the best impression when you have kids and a dog," Christa Rollison said. "It went very well - we kept it as nice as we could, but we wanted to make a better impression on customers."

The Rollisons are Brighton residents and naturally chose the city for their storefront.

"We thought since Torellos left - there was no place to buy tortes or cheesecakes except for typical cakes at the grocery store and we wanted to offer something a little bit different," Christa Rollison said.

The Wedding Cake Art & Design Center offers cheesecakes, tortes, fruit tarts and special event cakes such as birthday, graduation and, of course, wedding.

Rollison said her husband, Kory, does all of the baking. So by day, Kory Rollison fights fires as a Green Oak Township firefighter, and on his days off, he bakes delicious cakes and sweets.

According to Christa Rollison, her husband went to school to be a chef and discovered his niche working as a pastry chef at a fine dining restaurant. When the restaurant closed, they started by making desserts for restaurants, which evolved into the current business.

"We started doing wedding cakes and realized the need for it and profit margins were way up," she said. "It was tremendous. It was just something that worked out very nicely."

As for the firefighting, it was something Kory was interested in - he started as a paid on-call firefighter and now has a full-time position, according to Rollison.

Rollison calls the business a "family affair" because their children, Trevor, 14, and Anna, 12, frequently help out.
