Back to School Recipe: Crock Pot Chicken

This easy recipe is perfect for a family on the go.

School is back in session, sports and extracurriculars have started and you still need to make dinner for the family. Don't worry. This recipe for Crock Pot chicken takes 5 minutes to put together, and can cook while you are at work - ready in time to feed the family between the end of school and the start of practice. To make this recipe you'll need: To start, place the sliced potatoes on the bottom of the Crock Pot. These will hold up the chicken and keep it from touching the bottom of the pot while cooking. Next, pour in 1 cup of the broth. Place the chicken over the potatoes and broth, if you have a big Crock Pot you can add carrots and other vegetables. Pour the remaining broth over the chicken. A Pot Roast Recipe for Those Who Don't Have Time to Cook

This recipe proves, once again, that the Crock Pot can be a busy cook's best friend.

As I stated before in these columns, there are just some days (and weeks) when I either don't feel like cooking, or I simply don't have the time. This week has been one of those weeks. With my ankle still on the mend, I simply couldn't find it in me to cook a decent meal this week. So, I turned to Crock Pot and created my own simple recipe for slow-cooked pot roast. Pot Roast is one of those dishes I love because it encompasses vegetables and delicious beef in one, easy to clean pan. Unfortunately, for me, my Crock Pot isn't huge and I had to leave out the potatoes I normally include, I did, however, steam some and serve them on the side.
