Recipe: Maple Sausage Pancake Muffins

Make breakfast fun with these quick and easy muffins.

It seems that all of my friends have pinned one version or another of pancake muffins on Pinterest, so this week I decided to try my own recipe. The great thing about pancake muffins is that you can put whatever filling you want in them, whether it's blueberries, bananas or chocolate chips. I decided to try mine with sausage. In addition, I used pancake mix (where you just add the water) to make the pancakes instead of making them from scratch. This recipe makes 12 muffins, and can be served with butter and syrup. To make this you'll need: To start, preheat the oven to 350 degrees. Grease a muffin tin and set aside. In a small skillet, cook the sausage. This healthy breakfast recipe is a great way to start your day. Mix it together the night before and cook for 1 hour in the morning.

According to many studies and reports, breakfast is the most important meal of the day – yet so many people skip it. Start your day off right with this recipe for overnight scrambled egg bake. This recipe is made with low-fat cheese and egg substitute which lightens it up. To make this you'll need: To start, coat a 9 x 13-inch baking pan with cooking spray. Beat eggs in a large bowl and add the evaporated milk. Next, place the bread on the bottom of baking pan, it will overlap. Toss the ham and cheese over the bread. Pour the egg mixture over the top. Simple Crock Pot Breakfast Casserole

With just four ingredients, you can create a breakfast meal the whole family will enjoy.

There are day when I get tired of the same old thing for breakfast, whether it's oatmeal, cereal or toast. In the past, I've made different breakfast casseroles, but I can honestly say none have been as delicious as the one I made this week. The recipe comes from a blog called Shaken Together. While it's a Crock Pot recipe, it doesn't take too long to cook, only 2-4 hours depending on the setting. To make this recipe you'll need the following: To start, place the hash browns in the bottom of the Crock Pot. Next, brown the sausage in a large pan. Nearly everyone loves a good cinnamon roll, but homemade rolls can take a long time to make. Skip the mess, and the time, and try this recipe for cinnamon roll cake.

I was a bit skeptical when I came across this recipe for cinnamon roll cake. I love regular cinnamon rolls because they are ooey-gooey rolls of perfection. I was worried that turning something so texture-driven into a cake might detract from what I love most about cinnamon rolls. I was wrong. This cake recipe is not only easy, taking just 15 minute to whip together before baking, but it's also very, very good. Here's a crepe-style breakfast dish that's quick and easy to make.

In high school, I had a wonderful friend named Bree who introduced me to the greatness that is bumpy cake. It's a chocolate cake with "bumps" of butter cream frosting covered in a delicious fudge frosting. Honestly, if you've never had it, I suggest purchasing one — you can find it at several grocery stores, including Hiller's in Commerce. It's life-changing. Sadly, Bree died last year in a car accident — a beautiful person, inside and out, gone much too soon.
