New Salad Shop Offers Healthy Options in Brighton

Toma's Salad Shop, a family owned and operated restaurant, opened March 1.

A new family-owned and operated business catering to customers looking for a quick and healthy meal is now open in Brighton.

Toma’s Salad Shop, located at 8539 Grand River, opened March 1 and is a dine-in or carryout restaurant with a menu that looks to satisfy even the “pickiest” eater.

With a create-your-own salad option, customers are able to pick and choose from a variety of toppings that range from nine different cheeses, nuts, berries, vegetables, meat toppings and more than 30 different dressings options.

All ingredients are then served chopped style, according to restaurant owner Cathy Raspopstis, that lets customer enjoy a “mouthful of flavor in every bite.”

Designed by Cathy's husband, Tom Raspopstis, the menu is similar to the couple’s other restaurant, which they co-own, but offers a slightly healthier version of items that are served in the coney-style location.

After 30 years in the restaurant business, Raspopstis says the family decided to open Toma’s Salad’s to be closer to home and says they are “blessed” with their location- right next door to Brighton Donuts.

“We don’t have to serve desserts, we just send them next door,” she said. “Their donuts get made fresh here every night, so it’s the same concept as our fresh menu.”

Along with fresh donuts, Brighton Donuts also makes fresh bagels, which Raspopstis admits are her favorite to add to any of Toma’s soup selection as well.

"I can't eat our brocoli soup with getting an asiago bagel from next door first," she said.

Using Michigan-made products and focusing on healthy options, Raspopstis says their new restaurant will help fill a need they have seen grow over the years.

"Definitely the salad choice and the healthy choice is just going to be what everyone wants,” she said.

In the few short weeks the restaurant has been open, the response has been positive with only one complaint so far.

"The only negative feedback I've gotten so far is they've wanted a bigger plate," Toma’s Salad employee Keely Parsous said with a grin. “Or a big bowl to keep it all in."
